Step 6: Decorating & Finishing the Cookies

Decorating cookies is so much fun! Do it to impress your friends at your next party or even with the kids as a birthday party activity. (Fun and tasty!) While the icing is still wet, its fun to add sugar, sprinkles, and all types of designs…squiggles, dots, ribbons, or writing. The design can be as simple or complex as you have creativity and time!

CB Tip: Make sure your base coat is dry before adding your decorating (especially sprinkles or sugar) or your designs will “melt” or stick to your base coat and change your design.

 

Packaging: To finish our Bridal Shower Favors, we added detail of a little lavender “gem” to the bodice and a sweet pearl necklace to finish the look. The cookies were then “favor wrapped” them and closed the bags with a chocolate ribbon.

Step Five: Basecoat Decorating Your Cookies

Basecoat decorating is simply creating a background or base for your cookie artwork. We use the color flow technique. Just like coloring, you will “draw” on your outline and fill it in with icing color. This picture is the base coat for our bridal favors.

CB Tip: You can also have fun with your base coating by adding colors into your base coat. The effect is a smooth design, in your basecoat that shows no lines. You can create polka dots, plaids, hearts, swirls and more.

Bridal Shower Favors! Step 4: Coloring the Icing and Preparing to Decorate your Cookies

Step Four: Coloring the Icing and Preparing to Decorate 
Coloring your icing is easy, especially with quality coloring products. We use Wilton's concentrated gel colors. (www.wilton.com) With gel coloring, a little color goes a long way and the gel doesn't change the consistency of your icing. (Remember, too runny or to thick = headaches!)
 
CB Tip: When coloring your icing, try to mix enough of the icing for all of your cookies the first time...matching colors later can be difficult. Store the extra icing in an air tight container until you need it. (It can be stored on the counter top for a few hours or in the refrigerator for up to 2 weeks, but bring to room temperature and stir before using.)
 
 
Filling the Piping Bag: We use piping bags to base coat and decorate our cookies using the "color flow" technique. Fill your piping bag no more than 1/2 full, so it is easy to hold in the palm of your hand. (For more instruction on the color flow technique, sign up for our next cookie decorating class at The Coffee Station in Milan, Ohio. See our website for details.)
 
 
 
 
CB Tip: To keep the icing from oozing out the top of the bag while in use, gently squeeze out the air and tie it off with a rubber band. There are also nice"Icing Bag Ties" available for purchase (Wilton Item#417-173, 12 for about $4.50), but basic clean rubber bands work just as well!

Bridal Shower Favors! Step 3: Making the Royal Icing
Step Three: Making the Royal Icing
 
Once you've baked your soft, flavorful cookies, you need the right icing to turn them into little edible works of art! At the Cookie Boutique, we use Royal Icing. It is basically confectioners sugar, meringue powder and water.
 
The key to perfect royal icing is mixing it to the right consistency for your purpose. Too much water and you've got a drippy mess. Not enough water and its too thick to pipe and you'll not be happy with the results... you'll probably have a sore hand too!
 
 
When making your icing, be sure to sift your sugar. We use a large fine colander. It keeps all the little lumps out and will make your piping much easier. Be sure to sift the meringue powder too. It only takes one piece of granulated sugar to get in to give you lots of headaches later!
 
 
 
When mixing icing, we use one of our favorite stand mixers. You could use a hand mixer, but remember to use a low speed. Too fast and your icing will be very bubbly (full of air) and may leave "tiny holes" in your basecoat icing.

Baking the cookies is often the least favorite part for a lot of bakers, but I love it! There is nothing like making sticky dough into something soft, sweet and deliciously beautiful!
 
One of the best tools I've found is my mini-colander. Use it to sift and dust your baking surface and the top of the dough to keep it from sticking. 
 
 
 
 
Then, to keep your cookies from being full of extra flour, use a pastry brush to gently sweep it away before baking. We use the brush again after baking to dust off any remaining flour so when our customers taste our cookies, they taste our delicious cookies...not flour.
 
 
 
Bake with joy and dust, dust, dust. Perfect cookies, ready to ice!

Step One: Making Cookie Dough
Step One: Making Cookie Dough
 
Making cookie dough is not hard, but it does require proper measurement.  Add too much or too little and you've got a mess! (No estimating in baking!)
 
A great tip is to use a butter knife to help you measure. For example, if you are measuring sugar or flour, over fill your measuring cup and use the knife to scrape off the extra before adding it to your mix.  Measure well and expect great results!
